Remember when I said I was going to blog more about my life?? And when I said I was going to cook more consistently?? Well, Michael and I have decided to share what we ate every so often on the blog. Here’s the thing, though : we aren’t master chefs. We rely heavily on fun recipes and tweak them to our liking more often than not. So … first up : coconut curry + veggies.

I’m a ( serious ) fan of any rice / veggie combo, but curry sauce really spices it up a bit, in a good way. Chop up all your favorite vegetables, add some red pepper flakes + garlic, and simmer in your favorite curry sauce. We added a little coconut creamer to ours to lighten up the consistency. When warm + ready, serve it over a nice full bowl of rice. ALSO, my secret ingredient to almost anything is Krazy Janes. It’s a mixed up salt mixture that seriously rocks. So what have you guys been cooking?? I’m always on the hunt for trying new things.

    I LOVEEEE rice! You can seriously eat it with anything! It may be because of my Asian culture that I’ve gotten so used to eating rice with everything. But recently I’ve had to cut down on it. I now eat either brown rice or quinoa. Just as good as white rice but healthier!

    I can’t resist a good curry! Or any curry, actually. But my winter staple this year is a Thai Chili from Clean Eating, featuring sweet potato, bulgur, kidney beans & coconut milk. I just add a lot more spice than the recipe calls for.

    Ah, my mouth is watering. This looks so good, did you go off an original recipe? I’m no cook…at all so I try to follow recipes and add a little here and there.

      Nope – no recipe. What you see in the images is what we used, minus the curry ( not the prettiest to photograph, ha! ) …. Honestly, we just kind of throw it together. :) With a good curry sauce, you can’t go wrong!
